Follow-Up to the Credit Card Prank

I went into Einstein's Bagels just this morning and paid 15.48 for some bagels and coffee, and when I used my card to pay, I asked where the pen was to sign the receipt.

The woman told me I didn't have to. All of this got me wondering... how secure are our transactions? Does anyone care if the cards are stolen these days?
